fancy shmancy breakfast recipe!

If you follow on Instagram (@sdenen) you saw that I made these Pancake Cups as a pre-Mother's Day treat. They were inspired by Pinterest (of course) and absolutely delicious!

You get all the pancake goodness without the tedious task of flipping. It's a total win.

What you'll need:
-pancake tin
-your favorite pancake mix (confession: Bisquick is simple and just as yummy!)
-filling/toppings of your choice (I used strawberries, blueberries, banana, and cinnamon)
-syrup/butter/your favorite pancake condiment

What to do:
-Spoon the pancake mix into a greased pancake tin.
-Drop in the fruit/sprinkle the topping.
-Bake at 350 for 12-14 minutes.

I decided I wanted these on a whim and whipped them up in no time. For the next go round I want to do just a little more work and add some meat (sausage crumbles and/or bacon pieces.) Chocolate chip and peanut butter chip ones would be divine, too!

In addition to being easy peasy and sooooo good, they warm up nicely the next day. I refrigerated the leftovers and popped them in a toaster oven for a couple minutes :)
